Chef Kay Hyun-kyung, known for her robust charisma in a petite form, crafts imaginative dishes that thrill the senses. The cozy and secretive vibe reminiscent of a personal favorite spot awaits at East Village's "Thursday Kitchen."
Senna Huh: Hello, could you please introduce yourself briefly?
Kay Hyun: Hello, I am Kay Hyun, also known as Chef Kay.
Senna Huh: As a relatively young restaurant owner, how did you start your venture?
Kay Hyun: I've been in New York for about ten years. I started studying at the French Culinary Institute. After graduation, I worked in various restaurants before deciding to open my own place to introduce trendy, fusion cuisine rooted in Korean flavors to the locals here.
Senna Huh: Why did you choose East Village for your restaurant?
Kay Hyun: East Village is a hotspot for New Yorkers, full of young professionals in their 20s and 30s. It's a vibrant and diverse area, perfect for showcasing my dishes.
Kay Hyun: The name 'Thursday Kitchen' embodies the excitement of the week winding down and the weekend beginning. Our goal is to make Thursday an exciting day with delicious food and great vibes. Our menu features international tapas with a Korean twist, combining elements from various cuisines.
Kay Hyun: My inspiration often comes from subconscious thoughts about ingredients and creativity, rather than planned research. Traveling and exploring local markets enrich my subconscious, creating new culinary ideas.
Senna Huh: Do you recall any memorable customers?
Kay Hyun: We've had visitors from Spain, France, Denmark, and even the Netherlands, intrigued by our online reviews. It's always fascinating and gratifying.
Kay Hyun: Our focus is on delivering quality food and service, ensuring guest satisfaction. Teamwork is crucial among our 25 staff members, although leading the team can be challenging at times.
Senna Huh: What unique, enjoyable, or challenging aspects have you encountered?
Kay Hyun: It's fascinating that people of diverse backgrounds come to this small East Side spot. Our gnocchi-tteokbokki, blending Korean and Italian elements, often receives praise and surprises patrons.
Senna Huh: Could you share a glimpse of your typical day?
Kay Hyun: Our restaurant is open seven days a week, so my day starts with yoga. We prepare for evening service by noon and usually wrap up around 1 AM.
Senna Huh: How do you spend time away from your chef duties?
Kay Hyun: I often escape the bustling atmosphere with yoga and visits to galleries for inspiration.
Kay Hyun: Today, I prepared three dishes. First is gnocchi inspired by tteokbokki, topped with seaweed and garlic sauce. Next is a creamy kimchi paella, offering a Korean twist with fresh seafood. Finally, eel tacos featuring tangy cabbage, chipotle ssamjang, and guacamole.
Kay Hyun: I'm proud of the appreciation for my dishes and aim to continue creating unique culinary experiences that evoke admiration and satisfaction.
