This lemon cake, bursting with the fragrance of spring, pairs perfectly with warm tea or coffee. The addition of zesty lemon enhances the refreshing flavor. Using fresh lemon juice will elevate the taste and aroma even more. You can also substitute lime or orange for the lemon in this recipe. If you use a lemon cake pan, you'll end up with a cute-shaped cake. If you don’t have one, you can bake it in a muffin tin, madeleine pan, or loaf pan, but be sure to adjust the baking time according to the size of your pan.

Lemon Cake (Makes 12 servings)
- Unsalted butter: 160g
- Sugar: 150g
- Eggs (medium size): 3
- All-purpose flour: 180g
- Salt: ¼ teaspoon
- Baking powder: 1 teaspoon
- Zest of 1 lemon
- Juice of 1 lemon
- Vanilla extract: 1 teaspoon
(Icing)
- Powdered sugar: 120g
- Lemon juice: 4-6 tablespoons

Tips For Baking
- Sift the dry ingredients beforehand.
- Use butter and eggs at room temperature.
- Whisk the eggs together before adding.
- Baking times may vary depending on your oven's heat intensity.
- Adjust baking time based on the size of the pan and the amount of batter used.

1. Soften the room-temperature butter.
2. Add sugar and whip until it turns a light color and becomes fluffy.
3. Mix in the lemon zest and vanilla.
4. Gradually add the pre-mixed eggs in 3-4 additions while whipping.
5. Add the sifted dry ingredients and mix just until no dry flour is visible.
6. Incorporate the lemon juice and mix gently.
7. Spray the pan with baking spray and pour in the batter.
8. Bake in a preheated oven at 350°F (180°C) for 15-20 minutes.
9. Once cooled, prepare the icing and drizzle it over the cake.
